Naan Pizza with Sauteed Veggies
Serves: Expect 1 to 3 mini naan per person or 1/2 to 1 large naan per person
Ingredients:
 
Mini naan (4 1/2 inches x 6 inches) or large naan (7 1/2 inches x 10 1/2 inches)
1 tsp EVOO for mini naan and 2 tsp for large naan
Private Selection (Kroger) Marinara (1/4 cup on mini naan and 1/2 cup on large naan)
1 string mozzarella cheese for small naan and 2 string mozzarella cheese for large naan
1 sauteed onion and 1 sauteed bell pepper
 
Directions:
  1. Position oven rack in middle (or lower position in oven if want very firm crust).
  2. Preheat oven to 375 degrees.
  3. Spread top of naan with light layer extra virgin olive oil (EVOO).
  4. Spread layer of marinara sauce on naan.
  5. Slice string cheese or fresh mozzarella and space evenly on naan.
  6. Top with sauteed vegetables.
  7. Bake naan pizza on cookie sheet or pizza stone. Check after 4 to 5 minutes to make sure cheese is not burning. Depending on oven and size of naan, total bake time can vary from 4 minutes to 9 minutes.
  8. Remove from oven when cheese is melted and begins to turn light golden brown.
  9. Serve hot.
 
Shortcut: Use purchased Marinara, We like Kroger Private Selection Marinara.
For extra flavor, add a couple twists of Kroger Private Selection Italian Herb Grinder to naan pizza before serving.  
Tip: Keep string cheese in refrigerator for a convenient satisfying snack. Fresh mozzarella has a nice taste, but string cheese is less expensive and packed in a handy way.
Mini bell peppers in a bag are quick and easy to prep and use as a pizza topper.
Tip: This is a recipe that is fun for family members to help with and teens.
Challenge: To save time during the week, saute several bell peppers and onions. Store in a covered container in the refrigerator to pull out as an enhancement to your naan or other meals. They make a delicious sandwich topper.
