Tomatoes with Olive Oil & Herb Dressing
Serves: 2
Ingredients:
- 2 large ripe tomatoes, sliced
- 1 Tbsp. EVOO (Extra-virgin olive oil)
- 2- 3 twists of Kroger Private Selection Italian Herb Grinder
- 1 peeled and minced fresh garlic clove
- 1- 2 twists of fresh-ground black pepper
- 2 Tbsp. freshly grated Parmesan cheese
Directions:
- Lay tomato slices in serving dish or plate.
- In a small bowl, whisk together EVOO and all ingredients except Parmesan.
- Spoon dressing over tomato slices.
- Grate parmesan over tomatoes.
- To allow flavors to meld, cover and let rest on counter at room temperature for 30 minutes.
Shortcut: Use an herb grinder such as Krogers Private Selection Italian Herb Grinder. Flavoring foods using this grinder enhances food with a fresh mix of wonderful herbs.
Tip: Take advantage of the fact that fresh tomatoes are bountiful this time of year (summer), at a great price, in all Farmers markets, and always have the best flavor in summer.
Grate solid Parmesan or buy freshly-grated Parmesan. If you buy already grated Parmesan, for the best flavor, read the ingredient label and choose one that doesn’t contain an anti caking agent.
Challenge: Make more foods, such as pizza, at home. Food made at home is often more flavorful, is easier on the budget, and much healthier.
