Spaghetti Squash
Bake
You won't
believe how yummy this tastes. Plus it's soooo nutritious - you know
to build brain power and all that stuff!!
Ingredients:
1
medium spaghetti squash
2 Tbsp canola oil
1 small onion, diced
1 package (6 oz) sliced mushrooms
1 small can (15 oz) diced tomatoes
1 jar pasta or spaghetti sauce
Directions:
1. Preheat oven
to 375⁰F.
2. Wash
spaghetti squash. Place in a baking dish in the oven with 2 inches
of water.
3. Bake until
the spaghetti squash is tender - 50 minutes.
4. Remove
spaghetti squash from oven and set aside.
5. In a skillet,
add oil and heat. Add onion and sauté 3 minutes. Sauté mushrooms for
4 minutes. Stir in tomatoes and spaghetti sauce and heat through.
6. Cut spaghetti
squash in half, and spoon out seeds. Be careful, it might be hot.
With a fork, remove spaghetti squash. The squash should come out in
strands. Place in a colander so the squash can drain.
7. Serve
spaghetti squash strands topped with spaghetti sauce mixture.
