Very Berry
Raspberry Crisp
YIKES! What do
you do when your little puppy named DAISY destroys the Juicy Fruit
Raspberry tent at the Farmer's Market? You buy all the raspberries that
rolled into the middle of the street and you make VERY BERRY
RASPBERRY CRISP!!! YUM!!! Just don't mix up .... well you know
what (Diary 2)!!!
Here's what you
need to get started:
2 cups fresh raspberries (or other favorite berries)
1 can pears packed in juice or water, drain and save juice
1 Tbsp sugar
1 Tbsp lemon juice
1 tsp cornstarch
1 cup rolled oats
1/2 whole wheat flour
1/4 cup canola oil
1/4 cup packed brown sugar
1 tsp vanilla
Directions:
Preheat oven to
350 degrees.
1. In a small saucepan, add saved pear juice, sugar, lemon juice,
and cornstarch. Stir over high heat until bubbly. Pour into a
10-inch square baking dish.
2. Chop canned pears. Add to the baking dish along with raspberries.
Gently stir to coat all ingredients together.
3. In a medium bowl, combine oats, flour, oil, brown sugar, and
vanilla. Stir until all ingredients are coated with the oil.
4. Spread over the berry and pear mixture.
5. Bake at 350 for 40 minutes.
OMG!!! Yum and
double yum!! "No Daisy, you can't have any."
