Farmer's Market Very Veggie Soup

Who doesn't LV Veggie Soup? I do and so does Daisy, especially when I save some veggies to make her very favorite Snausage and Veggie Doggy Biscuits.

And you KNOW how Daisy L
VS the Farmer's Market. Remember the knuckle bone FIASCO? OMG, you have to read about it in Rockin'the Summer.

So when I make my Very Veggie Soup, I save 1/2 cup of the veggies and 1/4 cup of the sausage to add to Daisy's Snausage and Veggie Doggy Biscuits.

1 Tbsp canola oil
1 small zucchini, coarsely chopped
2 cups green beans, ends snapped and cut into 2-inch pieces
3 carrots, scrubbed and sliced into thick coins
2 red peppers, coarsely chopped
1 cup shelled edamame beans
3 cups spinach leaves
3 cups reduced-sodium vegetable or chicken broth
14 oz. smoked sausage (like lean Healthy Choice)


Add oil to a large stockpot and sauté vegetables for about 3 minutes on High.

Add broth and bring to a boil. Simmer with lid on pot for about 30 minutes. Remove 1/2 cup veggies for the doggy biscuits. Add additional broth if you want a more liquid soup consistency.

Before serving, slice or chop sausage links, add to soup, and heat through. Remember to save 2 oz of the sausage (about 1/4 cup finely chopped) for Daisy's Snausage and Veggie Doggy Biscuits.

If you want to make in the slow cooker, all all ingredients and cook on low 3 hours.
