Peanut Butter Oatmeal Cookies L♥♥V These!!! I L♥V L♥V these. So you know how I L♥V cookies, but not one or two. So here's what I do so I don't eat a truckload at a time. I only bake 6 cookies and freeze the remaining dough. And my mom has instructions FROM ME to only bake a few and NOT the whole batch like she used to. BTW, this is a fairly nutritious cookie recipe! WHAT? WHO SAID THAT?
Preheat oven to 350⁰F. In a large mixing bowl, mix together peanut butter, butter, and sugars. Stir in egg and vanilla extract. In another mixing bowl stir together oats, flours, baking soda, and salt. Slowly mix into peanut butter mixture. Mix for about 2 minutes on medium speed. The dough should come together and pull away from the inside of the mixing bowl. If needed, add water - 1 Tbsp at a time - until dough ball forms. Spoon cookies by rounded heaping tablespoons onto a greased baking sheet or parchment paper on the cookie sheet. Space about 2-inches apart (recipe should make 36 cookies). With a fork, score the top of the cookies with a crisscross pattern to flatten. Bake for about 12 minutes, or until cookies begin to brown around edges. Remove from oven and place cookies on a wire rack to cool. The cookies will be soft when you remove them from the oven, and harden as they cool. Each cookie is 76 calories (makes 36 calories). SO I LIMIT to 2!!!! OMG!!! Daisy wants to try one!! "Daisy, I'll make you your Peanut Butter and Jelly Barkers Doggy Biscuits."
